Yuki-chan: I had a friend like that too. Except she didn't just copy me... she copied almost everyone in our group. For example, when I started to get like anime a lot, she suddenly started liking it. When another friend said she liked the Yankees, she started liking them and started watching games. And in music too, she jumped from liking one artist to the next, based on everyone else's tastes. I was always afraid that she didn't have any hobby/obsession to call her own, but it seems like she's grown out of the habit by now. I guess she was just really easily influenced.

Hopefully your friend will grow out of it too, and soon. If not, I guess the best way would be to tell her. If it were me, I'd probably just throw hints around, like Sugar Fairy said, since it's hard for me to confront someone so directly.  Maybe she's trying to get closer to you and show that she has a lot in common with you (which wouldn't be true since she's copying you). In any case, she needs to get the message that copying you is annoying somehow...

there's a phrase that i'm trying to remember its something like imitation is the most sincere form of flattery. but you should just talk to them, they probably admire you so much they want to be just like you, maybe they think they are not good enough on their own. you should tell them that they are enough.

What would you do if your bestfriend admits to you that she likes this guy that you've had a crush on for the longest time? How would you react/what would you do if they start going out?

If the friend knew that you had a crush on the guy she's now going out with, you would have a right to be mad, and I would decide whether you need to talk to her about this or not. If she didn't know, I wouldn't say anything.
